TIZIMÍN.— A few days after starting the celebration of Hanal Pixán, the traditional festival dedicated to the faithful departed, in the town you can already smell the aroma of banana leaves and freshly prepared dough.
The tamaleras of the municipality have already begun to light the stoves of the ovens, or the hole known as “pib”, to prepare the expected pibes or mucbipollos, a traditional dish that cannot be missing on the altars of these dates.
Since last week, some schools started making altars and with it the sale of pibes, although this week and next will see the greatest movement, as demand for both pibes and tamales increases.
Prices vary depending on size and filling. The medium one sells on average for $500, but the largest ones can reach figures between $800 and $1,000, especially those made for large families.
Neguiby Jiménez Perera, a well-known tamale maker from Tizimil with almost 25 years of experience, commented in an interview with Yucatan Diary which has already begun to receive the first orders for this year’s mucbipollo.

“This year the prices range from $120 for an individual, $250 for two or three people, then follows $500, $700 and $800, the latter made in a pavera for an entire family,” he explained.
He noted that on a normal day he makes 300 tamales. On the strong days of Hanal Pixán he hopes to cook up to 1,000 pieces a day.
According to her, the secret of the flavor is in the cool, which is part of the pib filling along with the meats. He always uses chicken, pork and egg, as tradition dictates.
With pride, the tamale maker stated that the special touch of her kids comes from the love with which she prepares them.
“The love I have for my tamales makes them unique and makes my customers always come back for more.”
In addition, he announced that this year he will offer chicharra bullijua with cheese, with prices similar to those of mucbipollo.
In the coming days, Tizimileños will flock to the markets and bakeries to complete the elements of the altar, from breads, traditional sweets, candles and flowers, although without a doubt, the GDP continues to be the protagonist of the family table.— WENDY UCÁN CHAN
