Bruno Francisco, who heads Casa do Padeiro, located in Queluz, wrote on World Bread Day, celebrated on October 16th: “Behind each warm loaf of bread there is the silent and dedicated work of the baker, who before dawn already shapes the dough, guided by the experience and care of those who know the value of their craft. Bread represents sharing, sustenance and tradition. It is the result of the dedication of those who transform humble ingredients into something that it nourishes not only the body, but also community life.”
That same day, in Santarém, at the facilities of CNEMA – National Exhibition Center, awards were handed out within the scope of the National Portuguese Traditional Bread Competition. It became known that the Rye Cornbread – Casa do Padeiro got the “Best of the Best” distinction.
The objective of this annual competition, promoted by CNEMA, together with Qualifica/oriGIn Portugal, is “to reward, promote and publicize Traditional Portuguese Bread, as well as preserving Portuguese gastronomic heritage, contributing to the maintenance of regional culinary traditions and the country’s cultural diversity”. The organization further explains that the competition is “a way of identifying and distinguishing producers who maintain high quality standards in the production of Traditional Bread, recognizing their role in the local economy and in preserving ancestral know-how”.

“Seeing our work recognized in this way fills us with emotion. Each medal represents hours of effort, learning and dedication. But, above all, it shows that when you work with passion, the result takes on a different flavor. FBaking bread is much more than mixing flour, water and salt. It is a passion that accompanies us every day, a job full of dedication, patience and love”, declared Bruno Francisco, after the results of the competition were announced.
